Description

Fresh white fish marinated in lime juice with cucumber, red bell pepper, green onion tops, garlic-infused oil, cilantro, and optional mint. A light, zesty dish with a mix of textures and flavors.

Instructions

  • Dice the fresh white fish into small, bite-sized pieces.
  • Place the diced fish in a bowl and pour the lime juice over it. Make sure the fish is fully covered by the lime juice. This will "cook" the fish through a process called denaturation. Let it marinate in the refrigerator for about 20-30 minutes, stirring occasionally to ensure even marination.
  • Dice the cucumber, red bell pepper, and green tops of green onions. Discard the white parts of the green onions.
  • When using purple onion, choose a small amount (about 1/4 cup) and prioritize using the green parts of the onion. The green parts are generally lower in FODMAPs than the white parts.
  • After the fish has marinated, drain the excess lime juice.
  • In a separate bowl, combine the marinated fish, diced cucumber, diced red bell pepper, diced purple onion, and chopped green onion tops.
  • Drizzle the garlic-infused oil over the mixture. Add chopped cilantro and mint (if using). Mix everything gently to combine.
  • Season the ceviche with salt, pepper, and red pepper flakes (if desired) to taste.
  • Serve the fish ceviche immediately as a light and refreshing appetizer or main dish.
  • You can garnish the ceviche with additional chopped herbs or a slice of lime before serving.
