Description
Carrot and Ginger Soup is a light and flavorful soup. It’s blended to a smooth consistency, offering a comforting, mildly spiced taste that’s gentle on the digestive system. Perfect for a soothing meal, this soup is naturally gluten-free, dairy-free, and easy to digest.
Instructions
- Heat the garlic-infused olive oil in a large pot over medium heat.
- Add the grated fresh ginger and cook for about 1-2 minutes, stirring constantly, until fragrant.
- Add the chopped carrots and potato to the pot, and stir for another 2-3 minutes to coat them in the ginger oil.
- Pour in the chicken or vegetable broth, bring the mixture to a boil, and then reduce the heat to a simmer. Let it cook for about 20 minutes, or until the carrots and potatoes are tender.
- Once the vegetables are soft, use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup in batches to a regular blender.
- Stir in the coconut milk and cumin (if using), and season with salt and pepper to taste. If the soup is too thick, you can add a bit more broth or water to reach your desired consistency.
- Serve the soup warm, garnished with fresh parsley or cilantro.

- 1/2 cup coconut milk (or lactose-free cream)
- 1 teaspoon ground cumin (optional)
- Salt and pepper, to taste
- Fresh parsley or cilantro, chopped (for garnish)
